Chili con carne

Lean mince and beans are good sources of protein, which is essential for muscle repair. The vegetables in this dish (carrots, celery, and tomatoes) add antioxidants, nourishing your body even more and boosting your immune system. A little pepper gives your metabolism a kick, and the addition of avocado provides a good source of healthy fat, which is an excellent anti-inflammatory. It's a perfect recipe for a cold day, when your immune system could do with a boost. Serves 4

INGREDIENTS

  • 3 tbsp coconut oil

  • 2 cloves of garlic, minced

  • 1 onion, minced

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1 large carrot, grated

  • 2 ribs celery

  • 250 g lean mince

  • 1 red pepper

  • 2 tbsp tomato purée

  • 1 tin (400 g) chopped tomatoes

  • 1 tin (400 g) kidney beans

  • 125 g cherry tomatoes

  • 100 g spinach

  • 1 avocado

  • A small handful of fresh coriander

  • 1 lime

  • Red chilli, finely chopped

  • Rice

METHOD

Heat the coconut oil in a large saucepan over a medium heat. Add the onion, garlic, carrot, chilli, and celery, and fry until tender. Add the spices and mince, and fry until the mince turns brown. Add the paprika, tomato purée, and chopped tomatoes. Add 400 ml water. Bring to the boil and allow to simmer for 30 minutes, until the sauce thickens. Season with pepper and salt, and add the beans and cherry tomatoes. Add the spinach and coriander just before serving. Serve the chilli con carne with avocado, a twist of lime, and rice.
